"Light yellow. Spicy orchard and pit fruit aromas are brightened by lemon zest and dusty minerals. Pleasingly bitter citrus and pear skin flavors are sharpened by white pepper and convey a clean, energetic personality, finishing with impressive grip. Only a portion of this wine went through malolactic fermentation. These grapes are all Dijon clones, which proprietor Adam Tolmach believes "work great if the spot is cool enough."
